Avocado Goodness!

I found and made this recipe knowing Doug would love it…I just had no idea that I would love it too!  This has always been me with avocados: “Yuck!”, “No avocados please”, “That doesn’t come with avocados does it?”, “Gross, it has avocados!”

It is simple: Cut your avocados in half, put an egg in each half (you may need to hollow out the avocados a bit more if they are not large enough to hold the egg), and bake them in the oven on 350 degrees. We like our eggs over easy, so about 25 minutes worked for us…just keep an eye on them because every oven seems to be different.

Here is the final product: I added feta cheese and green onions on the top. Be creative and add your own fun topping ideas. This was such a creamy, rich, flavorful breakfast! I totally recommend it!

Serving Size: 2 people

Ingredients:

  • 2 large avocadoes
  • 4 eggs
  • Feta Cheese
  • Green Onions
