French Toast with Homemade Almond Pear Syrup for Mom

My mom is one of the most fun and funny people I know! I think you already got a small picture of that when you saw us jumping off of a table together. 🙂 I won’t even go into the crazy and silly pranks she has pulled on me in public! 😉 Anytime we are together she makes me laugh so hard….honestly, we have been known to lay in bed together laughing hysterically for half an hour. 😀 We would not do well together in a place where we need to be quiet…we have found that out the hard way! 😉 And we don’t hesitate at all to laugh just as hard in public, like we were doing in the picture above that my hubby took.

This year I am particularly grateful for how my mom has been here for me through some scary health stuff. She surprised me by flying out here this past October and staying with us for a couple weeks. She knew I needed her and she showed up! Wow! This is the best gift my mom has ever given me! I can’t tell you how much it meant to me and how much I needed it! It blessed my hubby and I so much! Here is a pic of when I first saw her at the airport…we just hugged and cried!

I love that my mom is my friend! I love that even though I am her daughter, she listens to my advice! I love that she has continued to grow as a person….may we all do that no matter how old we get!

So mom, though I can’t be there with you this Mother’s Day, I am making you some french toast drizzled with homemade almond pear syrup. (I know how much you ❤ your pears!! 😉 ). You deserve a yummy breakfast in bed!

French Toast with Homemade Almond Pear Syrup

  • Low glycemic and/or gluten free bread
  • 4 eggs
  • 2 tbsp maple syrup
  • 2 1/2 tsp pure almond extract
  • 1 cup almond milk
  • 1 tsp cinnamon
  • 1 Pear
  • 4 tbsp honey
  • 1 tbsp coconut oil, melted

  • Combine the eggs, maple syrup, 2 tsp almond extract, almond milk, and cinnamon. This will be your batter. It is low-glycemic and tasted wonderful!
  • While you are making the french toast, puree the pear in a food processor.
  • Add the honey, melted coconut oil, an 1/2 tsp of almond extract, and continue to puree until smooth. If your coconut oil is not melted all the way it will create white clumps. This isn’t a problem. Just put the syrup in a bowl and microwave for 30 seconds. I wanted to do that anyway so that the syrup was nice and warm.

Mom, I hope you ❤ this syrup as much as I did! Wow! So yummy! Happy Mother’s day Mom….I ❤ you so much!!!

A side note: Happy Mother’s day to all of you who are moms! I think of some friends whose kids are still younger…Kristin, Courtney, Jamie, and Jennifer who spend their days loving, serving, taking care of, and teaching their children in the way they should go. I also think of my friend Ann Louise who is a foster mom, hoping to adopt. She loves these children deeply and gives of herself so tirelessly. You all are wonderful moms!

Then I think of some of the older moms I know whose children are out of the house: Susan & Karen- you come to mind right away since I know both you and your kiddos. Your children are a blessing….reflective of the love and care you put into raising them!

I also think of those who have never been close to their mom, never had a mom, or lost their moms….particularly I think of my best friend. I know your heart may be heavy today, dear one, so please know that I care and am thinking about you and praying for you! Your mom would be so proud of the mommy you are today to your two little ones! I ❤ you!!

Then I think of those of us who long to have children but don’t yet for some reason, or are unable to have our own biological children. For some of us, Mother’s Day can be really, really hard. I just wanted to recognize that fact, in case some of you who read my blog are in these same shoes. May God comfort your hearts, may He give you a celebratory heart for others even in the midst of your unmet longing,  and may people around you be supportive and understanding!
