When you are eating low-glycemic and not using any refined sugars, it is not easy to find a Jam/Jelly to use. So, I did a little research and found out that it is super easy to make your own….I had no idea!! So exciting! My one challenge (as always) was figuring out how to do it without using refined sugar. But you know me, this is a challenge that I love and that I am always up for! 🙂
I did it! I made strawberry preserves, and I thought it came out great! I didn’t make it to store and use in the future, I made it to use right away. You will see what I did with it in a recipe I will be posting soon! 🙂
Homemade Strawberry Preserves
*Created by Lori @ Creating Beauty in the Kitchen
Ingredients:
- 12-15 strawberries (About 1 pound)
- 2 cups honey
- Fresh lemon juice from a half of a lemon
Directions:
- Wash strawberries and puree in a food processor until smooth.
- In a saucepan, pour the pureed strawberries, honey, and lemon juice, heating them on medium heat until it is all mixed.
- Once mixed, turn the burner up to boil, and let boil for 10 min, stirring often.
- Pour into a small container with lid. Let cool.
- Once cooled, refrigerate.
I love that you used honey in this. Looks fantastic!

What a great idea. I’ve been stopping buying Jam for my kids and feeling torn between mean and kind (to their health).

Thanks Tabitha! I can imagine you can also use agave if you preferred that over honey.

This looks like such a yummy and easy recipe, Lori! I have never tried making any kind of jam, so it was interesting reading about it. I’m so glad you were able to make this low-glycemic. Can’t wait to see what you did with it in your upcoming post.

Thank you Shari! I hadn’t either…I had no idea it was so easy! And was still doubtful until I kept stirring and saw the consistency change right before my eyes! It was pretty neat!

This is great Lori and it sounds easy to make too! I look forward to your upcoming post :). I’ve never taken on making homemade jelly but it something I’ve wanted to try for a long time. My Grandma made the best grape jelly growing up and it just doesn’t compare to the store bought brands.

Homemade jams are the best, Lori! I love that you figured out a way to make it without sugar, as I know the ones I make have a ton of it in them. Yours looks delicious, and I bet it even tastes more like fresh fruit using the honey. I hope you find success with the blackberries, too. I recommend you try peach also…I’ve always had great success with stone fruits.

Thanks! Let me know if you do play around with it and come up with something you like even better! I just made it to use right away, so I don’t know how this would be to store for a long time?

Wonderful idea Lori to add honey instead of sugar 🙂 I love homemade jam, I prepare fig, orange and quince jam at home.

Thanks Linda! What is quince? That’s fun that you make your own jam!

Hi Lori! I hope Linda wouldn’t mind and I reply instead of her. Quince is a hard yellow fruit, it’s something between apple and pear.

The Quince is a delicious fruit, looks like a mix of pear and apple (bigger and bumpy), always cooked and the color is yellow. Very fragrant 🙂
