Cherry Vanilla Pudding Pops

What was something fun that I could make for my niece and nephew in the midst of a really hot summer? Why, pudding pops of course! I say that as though I had actually made some before…. 🙂

Adding the cherries was a last minute decision, and I am so glad I did! Absolutely delicious!! Perfect compliment to the vanilla!

I am not sure who loved them more….the kids or me! The three of us finished them all off in one morning (yes, I did say morning)…to our credit though, they were quite small! 😉

Cherry Vanilla Pudding Pops

Ingredients:

  • 1 can of thickened, refrigerated coconut milk
  • Honey (to taste)
  • Pure vanilla extract (to taste)
  • Fresh Cherries

Directions:

  • Make pudding by combing coconut milk, honey, and vanilla. Combine with hand mixer. If it is not thick enough yet, put in freezer or refrigerator for a while.
  • Meanwhile, wash and chop your cherries into small pieces.
  • Then, when it is ready, pour the pudding a little at a time into little cups or a mold, layering with some cherries, then more pudding, then more cherries, etc.
  • I had to put the pops in the freezer for about an hour before I could put the sticks in. Once the sticks are placed in the middle of each pop, let freeze over night.

  5. Looking at this is torture! I want one so bad, hahaa! I can’t blame you for polishing them off this morning, and I think adding the cherries was a realllyyyyyyy good decision. This is sooo great for summer, I’ve actually been wanting to make something like this for a while now– it’s finally getting hot in NH so I’m on the hunt for stuff like this, thanks for sharing Lori!!

  7. Love the pudding pops Lori, and loved the addition of coconut milk. These look super tasty, I would be afraid to make these, because I know I’ll hide it from everyone and will probably be a huge piggy! I like your mould too, where did you get it from ?

    • Thanks so much Loretta! Hehehe….yes, they were hard not to keep eating! 😉 I had to remind myself that I made them for my niece and nephew! 😉 I got the mould at Walmart….was around 6 dollars.

I love cherries to begin with, but then to combine them with coconut milk? That’s just crazy delicious. LOVE this. And yes…these would absolutely be gone in the morning at my house too! Probably before anyone else was up, so that I wouldn’t have to share! ❤
